As we come out of the cold months (any day now!!) we start to look for those lighter & healthier recipes. Did you know that May is National Salad Month! And National Hamburger Month! Here's a nice light spring recipe for a quick and easy dinner: Big Mac Salad. Think of it as an unconstructed Big Mac without the bun.
2 1/2 cups lettuce, shredded (2 1/2 Greens)
1/4 cup tomatoes, chopped (1/2 Green)
4.5 ounces lean 95 - 97% ground beef, cooked (3/4 Lean)
1/4 cup reduced fat shredded cheddar cheese (1/4 Lean)
2 dill pickle spears, chopped (1 Optional Snack)
1 tbsp onion, chopped (1 Condiment)
1/2 tsp sesame seeds (1/2 Condiment)
2 tbsp Wish-bone Lite Thousand Island Dressing (1 Healthy Fat)
1/8 tsp white wine vinegar
1/8 tsp onion powder (1/4 Condiment)
Optional ~ a little sprinkle of stevia
Combine dressing ingredients in a small bowl. Set aside.
Combine lettuce, tomatoes, ground beef, cheese, pickles and onion in a medium sized bowl. Top with dressing and sesame seeds. Enjoy!
